Start from the quoted work. The tax goes on the full price, not on what is left after the deposit, because taxing the remainder would under-collect on every taxed payment.
The deposit already paid comes off once. It was a prepayment, so it was never taxed on the way in. What is left is the charge, collected on the day of the session.
Where the rate comes from

Set a single rate, or add a named line for each jurisdiction. Some places want GST and PST listed separately, so Maelo keeps both names and sums them into the one rate it charges.
When you collect on the day, that rate is editable on that payment alone. Drop it to zero for an appointment you worked somewhere else and your saved default stays exactly where it is.
The toggle at the bottom decides what the client reads. On, the quote line carries the rate. Off, which is the default, it names the tax without a number, which stays true for an artist who moves between tax regions.

The tax amount, and whether tax applied at all, are recorded on the session. The receipt shows the work, the tax and any tip as separate lines, and names the currency once, on the figure your client handed over.
Maelo calculates and records. It does not file or remit anything for you, and it will not tell you what your rate should be.
